Abstract
Bu tez çalışması kapsamında, Çorum ilinde gıda olarak tüketilen ve/veya halk hekimliğinde kullanılan bazı yabani bitkiler tayin edilmiştir. Bulunan bitkiler ile ilgili literatür taranarak, botanik ve yöresel adları, botanik özellikleri, kimyasal bileşimleri, etki ve kullanım alanları araştırıldı. Çalışmamız kapsamında Çorum il merkezi, ilçeleri ve köyler dâhil olmak üzere toplamda 32 yerleşim yerinde, arazi çalışmaları ve 124 kişi ile yaptığımız görüşmeler neticesinde doğada kendiliğinden yetişebilen 24 familyaya ait 36 tür bitki tespit edildi. Belirlenen bu bitkiler içerisinde Brassicaceae familyasına ait 4 tür, Apiaceae, Asteraceae, Polygonaceae ve Rosaceae familyalarına ait 3'er tür, diğer 19 familyaya ait 1'er tür bitki belirlendi. Belirlenen bu bitkilerin gıda maddesi ve tıbbi olarak kullanım şekilleri incelenmiştir. Mutfaklarda kullanımı artırmaya yönelik tarifler geliştirilip ve uygulanarak reçeteleri ile birlikte kaydedildi.
The aim of this thesis, some wild plants consumed as food / or as folk medicine in the Çorum province were determined. By searching literature related to determined plants, botanical and local names, botanical features, chemical compositions, effects and usage areas were investigated. Within the scope of our work, 36 species of plants belonging to 24 families spontaneously grown in nature were detected in the results of the interviews with 124 people and land studies in 32 settlements including Çorum city center, districts and villages. Among these plants, 3 species belonging to Brassicaceae family, 3 families belonging to Apiaceae, Asteraceae, Polygonaceae and Rosaceae families and 1 family belonging to 19 families were identified. The food and medicinal uses of these plants have been examined. Recipes for enhancing use in kitchens have been developed and implemented and recorded with prescriptions.
