Evaluation of the Relationship Between Sustainable Eating Behaviour and Food Choices of Adults Living in England and Turkey
Abstract
Bu araştırma, Türkiye ve İngiltere'de yaşayan Türk bireylerin sürdürülebilir beslenme davranışları ile besin seçimleri arasındaki ilişkinin değerlendirilmesi ve yaşanan ülkeye göre farklılıkların belirlenmesi amacıyla yürütülmüştür. Araştırmaya 105'i Londra'da ve 105'i İstanbul'da yaşayan olmak üzere yaş ortalamaları 32,58±11,87 yıl, BKİ ortalamaları 23,92±4,28 kg/m2 olan, %67,6'sı kadın, %32,4'ü erkek toplam 210 Türk gönüllü yetişkin birey katılmıştır. Araştırma verileri genel bilgiler formu, beslenme alışkanlıkları formu, Besin Seçim Testi (Food Choice Questionnaire/FCQ), Sürdürülebilir Beslenmeye Yönelik Davranış Ölçeği (SBYDÖ) ve Sürdürülebilir Gıda Okuryazarlığı Ölçeği (SGOYÖ) bulunan form kullanılarak çevrim içi toplanmıştır. İstanbul'da yaşayan katılımcıların ortalama ikamet süreleri 23,41±15,69 yıl iken Londra'da yaşayanların 9,48±12,74 yıldır (p<0,01). İstanbul ve Londra'da yaşayan katılımcıların Sürdürülebilir Beslenmeye Yönelik Davranış Ölçeği ve Sürdürülebilir Gıda Okuryazarlığı Ölçeği ile Besin Seçim Testi alt faktörlerinden Sağlık, Kolaylık, Doğal İçerik, Ağırlık Kontrolü ve Aşinalık puanları karşılaştırıldığında istatistiksel olarak anlamlı farklılık saptanmamış olup (tümü için p>0,05), Ruh Hali, Duyusal Çekicilik, Fiyat ve Etik Endişe alt faktörleri için İstanbul'da yaşayan katılımcıların puanının Londra'da yaşayanlardan yüksek olduğu saptanmıştır (tümü için p<0,05). İstanbul'da ve Londra'da yaşayan bireylerin sürdürülebilir beslenmeye yönelik davranışları besin seçimlerini istatistiksel olarak anlamlı ve pozitif yönde etkilemekte (sırasıyla β=0,48; p<0,01ve β=0,29; p<0,01), ancak sürdürülebilir okuryazarlık puanları etkilememektedir (sırasıyla β=-0,08; p>0.05 ve β=0,09; p>0,05). Besin seçimleri üzerinde sürdürülebilir beslenmeye yönelik davranışların etkisinin İstanbul'da yaşayan bireylerde daha fazla olduğu belirlenmiştir (Z=-3,568). Araştırma sonucunda yaşanan ülkenin besin seçimleri üzerinde etkili olduğu (β=-0,213; p<0,01) ancak sürdürülebilir beslenmeye yönelik davranışlar ve sürdürülebilir beslenme okuryazarlığı üzerinde etkili olmadığı belirlenmiştir (p>0,05). Bu araştırma sonucunda, yaşanan ülke ve sürdürülebilir beslenmeye yönelik davranışların bireylerin besin seçimlerini anlamlı ve pozitif yönde etkilediği bulunmuştur. Besin tercihlerini etkileyen faktörlerin anlaşılması sürdürülebilir diyetin benimsetilmesi ve yaygınlaştırılması konusunda yol gösterebilir. Dünya için küresel anlamda önem kazanan sürdürülebilir beslenme ile bireylerin besin seçimi ilişkisinin önemi ve bu yönde bilincin kazandırılmasının sağlanması ve aynı doğrultuda amaçla politikalar geliştirilmesi mevcut ve gelecek nesiller adına gereksinimlerin karşılanabilmesi için önemlidir.
This study was conducted to evaluate the relationship between sustainable nutrition behaviours and food choices of Turkish individuals living in Turkey and England and to determine the differences according to the country of residence. A total of 210 Turkish volunteer adults, 105 of whom lived in London and 105 of whom lived in Istanbul, with a mean age of 32.58±11.87 years and a mean BMI of 23.92±4.28 kg/m2 , 67.6% female and 32.4% male, participated in the study. The research data were collected online using a questionnaire form consisting of a general information form, a dietary habits form, the Food Choice Questionnaire (FCQ), the Behavioural Scale for Sustainable Nutrition and the Sustainable Food Literacy Scale. The average length of residence of the participants living in Istanbul was 23.41±15.69 years, while the average length of residence of the participants living in London was 9.48±12.74 years (p<0.01). There was no statistically significant difference between the scores of the participants living in Istanbul and London on the Sustainable Dietary Behaviour Scale and Sustainable Food Literacy Scale and Food Choice Test sub-factors Health, Convenience, Natural Ingredients, Weight Control and Familiarity (p>0.05 for all), while the scores of the participants living in Istanbul were higher than those living in London for the sub-factors Mood, Sensory Appeal, Price and Ethical Concern (p<0.05 for all). Sustainable eating behaviors significantly and positively influence food choices for individuals in Istanbul (β = 0.48, p < 0.01) and London (β = 0.29, p < 0.01). However, sustainable literacy scores do not have a significant effect in either city (Istanbul: β = -0.08, p > 0.05; London: β = 0.09, p > 0.05). It was determined that the effect of behaviours towards sustainable nutrition on food choices was higher in individuals living in Istanbul (Z=-3,568). As a result of the research, it was determined that the country of residence was effective on food choices (β=-0,213; p<0,01), but not on sustainable nutrition behaviours and sustainable nutrition literacy (p>0,05). As a result of this study, it was found that the country of residence and behaviours towards sustainable nutrition had a significant and positive effect on individuals' food choices. Understanding the factors affecting food preferences may lead to the promotion and dissemination of sustainable diets. It is important to raise awareness about the importance of the relationship between sustainable nutrition and individuals' food choices, which has gained global importance for the world, and to develop policies in the same direction in order to meet the needs of current and future generations.
