Abstract
Bu çalışmada Makedonya-Yugoslavya'dan Türkiye'ye gelen göçmenler ve Türklerin yemek kültürleri açısından etkileşimleri hedef alınmıştır. Öncelikle, konunun daha açıklayıcı olabilmesi için göç kavramından, göçlere neden olan faktörlerden, Makedonya'nın tarihinden, Makedonya'dan Türkiye'ye göçler ve nedenlerinden, göçmenlerin kimlik algısı ve aidiyet oluşumlarından, Makedonya mutfak kültüründen, hangi yemeklerin yapılmaya devam edilip, hangilerinin unutulduğundan ve son olarak Türklerle yemek kültürleri açısından etkileşimlerinden bahsedilmiştir. Anket ve derinlemesine görüşme tekniğiyle amaca yönelik sorular hazırlanıp, değerlendirilerek sonuca ulaşmak hedeflenmiştir. Bu görüşmeler İstanbul'un Bayrampaşa semtinde yaşayan, kendisi Makedonya'dan göçmüş veya ailesi göçmen olup kendisi Türkiye'de doğan insanlarla yapılmıştır. Görüşmeler sonucunda mutlaka yemek kültürleri açısından bir etkileşim yaşandığı fakat göç eden tarafın bundan daha çok etkilendiği ortaya çıkmıştır. Göçmenlerin kendi kültürlerini sürdürebilmek için kendilerine belli başlı yemekler seçtikleri ve onları ön plana çıkardıkları sonucuna varılmıştır.
In this case, immigrants from Macedonia-Yugoslavia to Turkey and their interactions in terms of food culture has been targeted. Firstly, it has been mentioned about migration concept, factors of causing migration, history of Macedonia, migration and its causes from Macedonia to Turkey, immigrants' perception of identity and belonging formations, Macedonian food culture, which food still continue to be cooked and which ones are forgotten and lastly interaction with Turks in terms of food culture to make the subject more descriptive. Surveys and in-depth interview technic prepared purposeful questions for aimed to achieve the results. These interviews made with people who are living in Bayrampaşa/İstanbul migrated from Macedonia to Turkey or people who are born in Turkey but their family are migrated from Macedonia. Result of interviews, it was revealed that there was an interaction in terms of food cultures but the migrant side was more affected. As a result, immigrants have chosen certain foods and bring to the fore them to maintain their own culture.
