Balkan göçmenlerinin sofra kültürü Tekirdağ Malkara örneği
Abstract
İnsanoğlunun ilk çağlardan bu yana coğrafi şartlara göre bulduğu gıdaları zaruri ihtiyaçlar doğrultusunda kullanmasıyla çeşitli coğrafyalarda yemek farklılıkları doğmuştur. Geçtiğimiz son yüzyıla kadar üst sınıf insanlar hariç, kişiler bulduğu gıdaları günlük ihtiyaçlarını karşılamak için kullandılar. Ancak içinde bulunduğumuz yıllarda gıdalara erişim daha kolay olduğu için çeşitli yiyecek kombinasyonları ile yeni yemekler yapılabiliyor hatta iki farklı kıtadaki ülkeler birbirlerinin yemeklerini birleştirip yeni bir ürün haline bile getirmeye başlamıştır. Balkan coğrafyası yüzyıllar boyunca birçok uygarlığa, dine ve ırka mensup kişilerin ortak yaşadığı bir coğrafya olmuştur. Bu sebeple çalışmamda uzun yıllar boyunca hâkimiyetimizde olan Balkan coğrafyasından göçen kişilerin Malkara'da, yapılan gıda ürünlerini, adap ve kültür gibi etkenleri çalışmamda yansıtmak istedim. İlk olarak konularımın daha kolay anlaşabilmesi için Balkan coğrafyası, tarihi, etnik yapısı ve mutfak kültürlerinden bahsedilmiştir. Ardından konumun ana başlıklarından olan 'göç', 'kültür' ve 'sofra' kavramları araştırılmıştır. Yöredeki yemek tariflerinin toplanabilmesi amacıyla görüşmeler yapılan röportaj soruları ile araştırmacı tarafından bizzat yürütülmüş ve toplanan veriler orijinalliği korunarak aktarılmıştır. Son olarak da çalışmamda yöredeki kullanılan ürünleri ve diğer yapılan çalışmalar ile karşılaştırmaları yapılarak önerilerde bulunulmuştur.
Culinary differences have arisen in various geographies with the use of foods that human beings find according to the geographical conditions in line with the essential needs since the early ages. Until the last century, people, except for the ones in upper class, used the food they found to meet their daily needs. However, since access to food is easier in the current years, new meals can be prepared with various food combinations; even, countries on two different continents have begun to combine each other's food and turn it into a new product. For centuries, Balkan geography has been a geography where people from many civilizations, religions and races have lived together. For this reason, I wanted to reveal the foods produced in Malkara by people who migrated from the Balkan geography, which we dominated for many years, and factors such as customs and culture. First of all, in order for the subjects to be understood more clearly, topics such as Balkan geography, history, ethnic structure and culinary cultures were discussed. Then, the concepts of 'immigration', 'culture' and 'culinary', which are among the main headings of the subject, were examined. In order to collect the recipes of the region, the interviews were carried out by the researcher and the collected data were transmitted by preserving their originality. Finally, in my study, suggestions were made by comparing the products used and other studies in the region.
