Abstract
Toplum kültürünün temelini mutfak kültürü oluşturmaktadır. Toplum kendi gelişimi ile mutfak kültürünü geliştirir ve diğer toplumlardan etkilenir. Giresun mutfağında hızlı hazırlanan, ayaküstü atıştırılan yemek tarzı artarken haşıl, ceretta, celecaş gibi tarifler yavaş yavaş yeni nesillerin yemek listelerinden silinmektedir. Bu çalışmanın amacı da; bu yemek kültürünün devamlılığını sağlamak ve bunun yanında Giresun mutfağındaki bu tarifleri daha sağlıklı hale getirebilmektir. Araştırmacı tarafında belirlenen tariflerden 35 tanesinde iyileştirmeler yapılarak minimum %25 enerji düşüşü sağlanıp yeni tarifler hazırlanmıştır. Bu yemeklerin hem geleneksel hem de daha düşük kalorili olan yeni tarifleri hazırlanıp enerji ve besin öğesi değerleri hesaplanmıştır. Culinary culture forms are the basis of community culture. The community develops it's own kitchen culture through its development and is influences by other societies. While Giresun's fast-prepared and fast consumed food style increases, recipes such as 'haşıl, ceretta, celecaş' are gradually being removed from new generations' lists. The aim of this study is; to ensure the continuity of this food culture and also to make these recipes more healthy in Giresun cuisine. 35 of the recipes determined by the researcher were improved and a minimum energy reduction of 25% was achieved and new recipes were prepared.
