Göç ve sefarad mutfağı göç'ün mutfağa etkisi bağlamında İstanbul sefarad mutfağı

Abstract

Gastronomi alanında yeme içme kültürünün öneminin arttığı şu günlerde göç ve mutfak ilişkisini araştırmak oldukça yoğun bir emek ve dikkat isteyen bir süreci gerektirmektedir. Elinizdeki bu araştırma ise bir yıllık yoğun bir çalışma ve emeğin ürünüdür. Yapılan araştırmada göç ve mutfak etkileşimi bağlamında Sefarad mutfak kültürü araştırılmıştır. Kaynakların kıt olması nedeniyle İstanbul Sefarad mutfak kültürü araştırması bilimsel olarak çok az ilgi görmüştür. Bu çalışma ile göç ve mutfak etkisinin kaçınılmazlığı incelenmiştir. Bu bağlamda Sefarad mutfak kültürü daha görünür hale getirilmek istenmiştir. Aynı zamanda amacımız göç sonucu oluşan mutfak kültürünü ortaya çıkarmaktır. Yukarıda belirtilen amaç doğrultusunda 2020 yılında İstanbul da saha araştırması yapıldı. Çalışmamızda İstanbul da yer alan Sefarad Yahudilerinin göç süreçleri, toplumsal hayatları, mutfak kültürleri araştırılmıştır. Bu araştırmanın gerçekleştirilmesi için sağlam bir literatür taraması kapsamlı bir arka plan incelenmiştir. Nitel bir araştırma olan çalışmamızda kartopu tekniği uygulanmıştır. Yapılan araştırma 18 kişiyle derinlemesine mülakat şeklinde gerçekleştirildi. Kaynak kişilerin 18 kişi ile sınırlı tutulmasının nedeni kaynak kişilere ulaşmanın zor olması ulaşılan çoğu kişinin ise görüşmeyi kabul etmemeleridir. Aynı zamanda saha çalışma sürecinin pandemi sürecine denk gelmesi de kişi sayısının sınırlı olmasının bir başka nedenidir. Araştırmanın ana bulguları göç, kültür ve mutfak başlıkları altında incelenmiştir. Çalışmamızda göç olgusundan yola çıkarak toplum üzerindeki sosyo-kültürel etkileri araştırılmak istenmiştir. Tarih boyunca yaşanan göç hareketlerinin gelişiminde özellikle Osmanlı Devleti döneminde meydana gelen Sefarad Yahudilerinin Türk topraklarına yapmış olduğu göç ve bu süreç sonrası yaşanan kültürleşme süreci mutfak çerçevesinde incelenmiştir. Yapılan çalışma sonunda Sefarad mutfağının özellikle pırasa köftesi, gato salam, pandispanya, masapan gibi ürünlerle İstanbul mutfağının gelişmesinde önemli katkılarının olduğu tespit edilmiştir. Nowadays, when the significance of eating and drinking culture in the field of gastronomy has increased, investigating the relationship between migration and cuisine requires a process that requires a lot of effort and attention. This research is the product of 1 year of intense work and effort. In this research, in the context of migration and cuisine interaction Sephardic cuisine culture was investigated. Due to the scarcity of resources, the study of Istanbul Sephardic cuisine culture has received little scientific attention. In this study, the inevitability of migration and cuisine effect was examined. In this context, Sephardic cuisine culture was sought to be made more visible. At the same time, our aim is to reveal the cuisine culture formed as a result of migration. In line with above mentioned purpose, a field research was done in Istanbul in 2020. In our study, the migration processes, social lives and cuisine cultures of Sephardic Jews in Istanbul were investigated. A solid literature review extensive background was examined to carry out this research. In our study, which is a qualitative research the snowball technique was applied. The research was conducted in the form of in depth interviews with 18 people. The reason why the source people are limited to 18 people is that it is difficult to reach the source people and the most of the people reached don't accept the interview. At the same time the fact that the field work process coincides with pandemic process is the another reason for the limited number of people. The main findings of the research were examined under the headings of migration, culture and cuisine. In our study, it was aimed to investigate the socio- cultural effects on the society based on the phenomenon of migration. In the development of migration movements throughout history, the migrations of Sephardic Jews to Turkish lands, especially in the Ottoman Empire period, and the acculturation process experienced after this process were examined within the framework of cuisine. As a result of the study, it has been determined that Sephardic cuisine has significant contributions to the development of Istanbul cuisine, especially with products such as leek meatballs, gato salami, sponge cake and masapan. In our study, the cultural change and development of Sephardic cuisine, which is an important part of Istanbul cuisine, as a result of migration, was examined in detail and its effect on Istanbul cuisine was investigated.
