Gastronomi eğitiminin fine dining restoranlarda çalışan seçimine etkisi

Abstract

Gastronomi gün geçtikçe kendini yenileyen ve özgünleşen bir kavram olmuştur. Bu çalışmanın başlangıcında gastronomi kavramının tarihi ele alınmış, dünyadaki farklı ülkelerin gastronomi eğitim sistemleri incelenmiştir. Ayrıca Türkiye'de gastronomi ve aşçılık üzerine eğitim veren kurumlar ve eğitim sistemleri ayrıntılı olarak ele alınmıştır. Dünyada ve Türkiye'de gastronomi eğitimi pek çok farklı kurumda çeşitli yollarla verilmektedir. Türkiye'de bu kurumlardan her yıl yüzlerce öğrenci mezun olurken, bu öğrencilerin piyasada iş bulma imkanları her geçen gün değişiklik göstermektedir. Bu çalışma Türkiye'de gastronomi alanında fine dining restoranlar üzerine yazılan ilk tez çalışması olması kapsamında önem taşımaktadır. Araştırmanın soruları kapsamında, gastronomi mezunlarının iş bulma olanaklarına aldıkları eğitimin nasıl etki ettiği, fine dining restoranlarda mutfak şefi olmak istediklerinde bunun hangi faktörlerle ilişkili olduğu araştırılmıştır. Fine dining restoran şefleriyle yapılan derinlemesine görüşmelerle araştırma soruları cevaplandırılmıştır. Gelecekte gastronomi alanında eğitim alacak öğrencilerin, mesleki kariyer olarak daha iyi yönelimlerde bulunmasına katkı sağlamak amaçlanarak sonuçlar ortaya konmuştur.

Gastronomy is a concept that renews itself day by day and acquires originality. First, this study examines the history of gastronomy concept and the gastronomy education in different countries in the world. In addition, education systems and institutions that focus on gastronomy and cookery in Turkey has been discussed in detail. In the World and Turkey, gastronomy education is provided in different ways in various types of institituons. In Turkey, while hundreds of students each year graduate from these institutions, the job opportunities in the market varies every day. This study is significant considering that is written first thesis study at Gastronomy field about on fine dining restaurants have a place in scope. Research questions of the study investigate how the education of the gastronomy graduates affects their job search and which factors are associated with becoming a fine dining chef. Answers of research questions are analyzed considering the in-depth interviews with the chefs of Fine dining restaurants. Results are discussed with the aim of contributing better orientation of future gastronomy students in their professional career.
